Tom Kha Gai (Creamy and Tangy Chicken Soup)

Serves 6

1 can coconut milk
8 cups water or unsalted chicken stock
1 stalk lemon grass, cut into 4-5 pieces
4 oz galanga (Thai spicy ginger root), sliced
5 kaffir lime leaves, bruised
8 oz straw mushrooms

8 Tablespoons fish sauce
1 teaspoon salt
1 teaspoon sugar
1 ½ pounds chicken breast, sliced into bite-size pieces
1 small white or yellow onion, julienned
Juice of 1 lime
1 teaspoon chili in oil paste
Sprigs of sweet basil for garnishing

Bring the water to a boil in a pot. Add lemon grass, galanga and lime leaves. Bring mixture to a boil again and cook for 15-30 minutes. Add fish sauce, salt, sugar, chicken, onion and straw mushrooms.

Bring pot to a boil again. Add lime juice and chili paste.

Serve with Thai jasmine rice and a basil garnish.
